Bacon & Egg "Keto Style" Gougères 4:1

Makes: 1 Gougère

INGREDIENTS 

16 g 36% Cream

16 g Egg (raw, mixed well)

2 g Grated parmesan cheese (100%)

2 g Swiss cheese (grated)

5 g Bacon, cooked crispy

39 g KetoCuisine™

11 g Butter, melted

1 g Green onions (tops only)

2 g Sour cream - cultured (not low-fat)

 

  • This recipe is made in two parts. First the bottom bacon muffin style and then filled with an egg topping.

DIRECTIONS

  1. Preheat oven to 350°F

  2. Cook bacon until crispy. Crush pieces until very fine. Set aside.

  3. Melt 4 g butter 

  4. Weigh 4 g cream

  5. Combine butter and cream in a bowl

  6. Add KetoCuisine™ stirring constantly until a dough forms 

  7. Mix in 10 g of egg

  8. Fold in grated swiss cheese and chopped bacon

  9. Spoon into muffins cups & bake in oven for 12 - 15 minutes 

  10. In a frying pan over very low heat, combine 7 g melted butter, 6 g egg, 12 g cream stirring constantly until crumbly

  11. Remove from heat & blend in parmesan cheese, sour cream, green onions. Can add a dash of salt & pepper if desired

  12. Spoon egg mixture over cooled KetoCuisine™ "style" Breakfast gougères and serve
