2 tablespoons (30 g) 36% cream
1/4 cup (40 g) chicken broth (fat free)
1/8 cup (12 g) onions
1 cup (180 g) tomatoes
2 teaspoons (10 g) tomato paste
1/8 cup (16 g) cheddar cheese
1 1/3 cups (106 g) KetoCuisine™
2 tablespoons (22 g) butter
Pinch of basil
Pinch of parsley
Pinch of salt
Chop carrots, onions and tomatoes. Shred cheese. Set aside
In a saucepan sauté onions, carrots in butter until tender. Stir in tomato
Cover & simmer 10 minutes over medium/low heat
Remove from heat, mash/purée well
Blend in broth, cream and tomato paste
Add spices
In another bowl blend KetoCuisine™ with 1 cup water then add to soup
Return to heat through
Remove from heat and divide into 2 bowls
Sprinkle with shredded cheddar cheese and serve
Let soup rest while spices blend
May add more water for thinner soup
